DYNAMICMOM YELLOW APRON MEALS- HOME COOKING! 30 MINUTES FROM PREP TO PLATE!


HEALTHY FOOD, HEALTHY FAMILY! HEALTHY, QUICK FOOD, HAPPY WIFE and MOMMY!! And so it is with my DYNAMICMOM YELLOW APRON MEALS, THERE'S HARDLY ANY WAIT, IT'S A HEALTHY DINNER IN 30 MINUTES FROM EASY PREP TO PLATE! :-) I know how it is trying to feed a tired, hungry family at the end of a crazy day. We want easy and fast. And many moms will make a b-line to the drive through, order take-out or heat up some processed box of something from the freezer and be done with it. We'll deal with the tummy aches-"I'm still hungry"- and myriad health issues later, and most times it's sooner than later. And what about us possibly eating together at the dinner table? Quick, Easy, Healthy AND Dining At The Table, Together? ABSOLUTELY! Well, Dining Together; crazy schedules permitting :-) But Quick, Easy, Healthy and Delish, POSITIVELY!

Here's one of my dinners that's a fam fave! Yes, Even Hubby Loves It! :-)The recipe follows, give it a try and Let's Keep Healthy Home Cooking and Dinnertime At The Table Alive! Enjoy!

BAKED SALMON, BROWN RICE and BLACK BEANS, SAUTEED MUSHROOMS, ONIONS and PEPPERS!

INGREDIENTS
*6-8 Salmon Steak Fillets (Fresh or Frozen) - thaw before cooking
*2 Cups Brown Rice
*1 Can Black Beans
*1 Carton Sliced Mushrooms (1 large carton or 2 small)
*1 Large Onion (or 2 small)
*1 Large Green Pepper (or 2 small)
*1 Large Red Pepper (or 2 small)
*2-3 Garlic Cloves
*1 Beefy Tomato
*Sea Salt
*Black Pepper
*Curry Powder
*Dried Italian Seasoning
*1 Large Lemon (or 2 small)
*1/2 Stick Butter
*Extra Virgin Olive Oil

TOOLS
*Sauce Pan (or your fave rice pot!)
*9x11 (3 Quart) Casserole Dish or Foil Pan
*Aluminum Foil
*Cutting Board (2 if you prefer separate prep for meat/ fish from veggies)
*Measuring Cup and Spoons
*Colander (for rinsing and draining black beans)
*Saute' or Fry Pan
*Cooking Spoon (not slotted)
*Chef Knife (your large knife for cutting veggies)

PREP
* Heat Oven To 375
*Slice Peppers, Tomato and Onion- nice and beefy cuts
*Chop Garlic
*Bring 4-1/2 cups of water to boil
*Rinse and Drain Black Beans
*Cut Lemon in half

NOW LET'S COOK!

RICE and BLACK BEANS
In your boiling water, sprinkle in Sea Salt, Black Pepper and add about a teaspoon of Butter. Now add your Brown Rice and bring to 2nd boil. Add rinsed and drained Black Beans. Stir. Turn heat to low, cover pot and cook until rice is nice and tender (about 30 minutes but may need 40 :-)

SALMON (while rice and beans are cooking)
In your Casserole Dish or Foil Pan, melt half of the stick of butter you have left. *Remove dish from oven after butter is melted. Be sure to evenly coat dish with butter. Layout Salmon on cutting board (a few pieces at a time) and season with Sea Salt, Black Pepper and Dried Italian Seasoning on both sides. Arrange in Casserole Dish and repeat with remaining fillets. Squeeze fresh Lemon Juice all over the Salmon. Cover with Aluminum Foil and place in oven for 20 minutes (set a timer if you have one, you can also use your phone alert). At 20 minutes, remove the foil from the Casserole Dish, spoon the juices over the fish and cook about and extra 5 minutes. Remove from oven. The Salmon should be soft, juicy and flaky. Re-cover with foil.

SAUTEED PEPPERS, ONIONS and MUSHROOMS (while the Salmon is cooking)
Heat your Saute' or Fry Pan on Medium heat. Add about 1/4 cup Extra Virgin Olive Oil and a pat of Butter. Stir lightly until butter is melted. Add Onion, Peppers, Garlic, Tomato and Mushrooms. Toss lightly to combine together. Add Sea Salt, Black Pepper and a sprinkle of Curry Powder. Give it a light toss together so all the ingredients combine in the pan. Make sure all the veggies and mushrooms are coated with the Olive Oil and Butter. Cook til the Mushrooms are nice and tender (about 15 minutes, maybe 20 if your mushrooms are larger).

FYI
These Dishes are easy to prep and cook, but watch your time- they're also easy to over cook. All in All, Dinner Will Be Ready And On The Table in 30 minutes! (40 tops depending on how fast your Brown Rice cooks) *Also, cooking times are approximate depending on your stove and oven heating. *Serves 2 for about 3 days or 4-6 for 1-2 days.

TIPS
*Always taste as you cook and season to taste.
*You can make plates and serve at the table for younger children or bring the pots to the table and let everyone serve themselves!
*Make cooking a Family Affair and let everyone help Prepare!
*Cut the Salmon Fillets in half before serving. It stretches the meal into 2 days!
